  • 2 tablespoons olive oil
  • 30 gr butter
  • 1 slice cooked ham (1cm thick)
  • 200 gr. Capriolo cheese
  • White wine, stock, salt and pepper, to taste

In a saucepan, sauté a finely chopped onion in two tablespoons of oil and 30 gr. of butter until wilted. Add a slice of diced ham and 400 gr. of rice, toast for a few minutes, then moisten with white wine and leave it to evaporate. Now add two ladles of boiling stock and continue cooking for about 15 minutes, by stirring in some more stock from time to time. After this time, add the “Capriolo” cheese cut into pieces, salt and pepper, wait a few minutes until the cheese has melted and serve this very tasty first course.
